For Rasmalai, take atleast 2ltr milk. Add 1litre for boiling for masala milk and another 1 ltr for making balls.
How to make masala milk:
Boil milk to the extent when 1 ltr milk becomes half off it. It will become thick enough. Then add saffron, elaichi powder, pistachio and other nuts in the milk along with half cup sugar. Let it boil for 15-20 minutes. Masla milk is ready. Keep it aside for cooling.
Preparation of balls:
When milk boils switch off the flame and add 1/2 cup of water to bring the temperature of the milk down a bit. Wait for 5-10 minutes and then start adding lemon juice till milk curdles. Add lemon juice till the milk curdles completely. Now, chena is prepared. Wash it so that no smell or taste of lemon is there. After that add 3 cups of sugar in a pan and 4 cups of water, keep it for boiling.
In meantime, make balls out of chenna that you made from milk. By that time sugar water must have boiled. Add balls into sugar syrup and let it cook for 15-20 minutes. After 15-20 minutes, put off flame and let it cool.
Once it cool down put ball into masala milk. Rasmalai is ready!
